Today I am sharing the secret recipe handed down to me by the the executive chef of Punjab grill, one of the illustrious eateries owned by my husband.

The secret marinade is the key ingredients in this recipe and the way to making your lamb chops extremely tender and unique:

I have provided herein below all the ingredient required to make this simple yet exquisite recipe at home.

Ingredients

  • 800 gm
  • Salt To taste
  • Tomato puree 1 cup. 
  • Ginger Paste 2 tsp
  • Mustard Oil 2 tbsp
  • Garlic Paste 2 tsp
  • Yoghurt 4 cups
  • Degi Mirch 2 tbsp
  • Cumin Powder 2 tsp
  • Bay Leaf 2-3 no
  • Lemon Juice 2 tbsp
  • Chat Masala 1 tsp
  • Cinnamon Sticks 1-2 no
  • Green Coriander 1tbsp
  • Cloves 5-6 no
  • Big Cardamom 2-3 no
  • Onion Sliced 1 cup
  • Small Cardamom 2-3 no

 

Instructions

  1. Clean and wash Mutton Chops.
  2. Add in ginger Garlic Paste, salt, Degi Mirch, keep it overnight.
  3. Take a thick bottom vessel, add whisked curd, and all other ingredients except chat masala and green coriander.
  4. Add mutton chops, cook for about 45 mins on slow heat, keep the container sealed, add water if required.
  5. Once cooked, cool and take out mutton chop out of vessel, strain gravy and keep the chops dipped in gravy.
  6. Skewer mutton chops and cook in moderately heated tandoor, basting occasionally.
  7. Sprinkle chat Masala, over the lamb chops and Garnish with fresh Coriander, before serving hot.
