Chef Mathur reveals a real mastery of flavours and textures that can be sensed in the delectable Murgh Shekhawat cooked with yoghurt, onion, tomato and chilli, and even in his Nalli Roganjosh an aromatic lamb dish infused with chillies and yogurt and cooked to perfection or the Zaffrani Guchhi aur chilgoza ka pulao, an ode to Kashmir’s love for food.The restaurant is a balmy strip of foodie fun and a meal of North Indian dishes adds a measure of gustatory refinement. My vote also goes to Anari Ananas and Masala Malai which has a flavour so unique and distinct and marries well with the spiced Burrata. The stir-fried ladyfinger with raw mango and parathas is a highlight.There is nothing random on any of Mathur’s plates, nothing there that serves to simply look appealing; everything is on the plate for a reason. You can end this gastronomic delight with a pick from the exotic dessert menu including Khubani Ka Meetha made with slow poached dried apricot, or a creamy Peshawari pista kesar phirnee. Delicious food, set against the gorgeous ambience, with flavours that linger in your mouth – that’s the essence of the Saffron’s new menu!
