This is a beautiful low carb chinese recipe. You can have it with cauliflower rice if you’re into Keto or then regular rice if you are not. Enjoy-cooking is therapy!!!

INGREDIENTS

  • Half kg chicken marinated in oil and garlic paste and chopped
  • 2 tblsp oil
  • Chopped  cashewnuts-10-12
  • 3 green chillies and 2 red chillies thinly chopped
  • 1 tblsp Szechuanpaste (available in most supermarkets)
  • 1 tblsp tomato sauce
  • 1 tblsp soya sauce
  • 1 tblsp water
  • Chpd spring onion green

METHOD

  1. Put 2 tblsp oil in pan
  2. Fry the  cashews
  3. Add the chillies
  4. Now remove the cashewnuts  and keep aside.
  5. Add chicken and Stir fry chicken on high.
  6. Make sauce by mixing 1 tblsp Szechuan sauce; 1 tblsp tomato sauce n 1 tblsp soya.
  7. Add 1 tblsp water .
  8. When chicken dries add the szechuan sauce mix.
  9. Stir fry for half minute.
  10. Add the cashewnuts.
  11. Garnish with spring onions and serve
