Q. Zorawar, you’ve inherited a formidable and well known legacy. How did you manage to carve out your own distinct identity and vision within the culinary world ? And what role do you believe social media and your stints on TV, popular talk shows etc. have played in making you a household name ?
I have always believed that while a legacy is an invaluable foundation, one must build their own architectural marvel upon it. My vision was to reimagine Indian cuisine for the modern, global palate infusing innovation while paying homage to our culinary roots. My aim was never to replicate but to revolutionise. Platforms like television and social media have amplified this vision manifold. They have allowed me to engage with a new generation of diners, showcase the stories behind our concepts, and demystify the idea of fine dining. They have been instrumental in transforming what we do from mere dining experiences to cultural conversations.

Q. Dildeep, your background is in law. What was the pivotal moment that led you to immerse yourself in the demanding world of hospitality, and do believe your legal insights uniquely shape your approach to the business ?
I didn’t set out to enter hospitality but marrying into it, I saw up close how powerful food and restaurants can be in creating experiences, memories, and even culture. The pivotal moment for me was realizing that behind the glamour, it’s a business that demands precision, resilience, and passion qualities that my legal training had already ingrained in me. But what truly drew me in was the creative side: the chance to help shape concepts, contribute to the R&D process, and be part of building something that excites people and tells a story through food.
Q. Every power couple has a dynamic. Beyond the boardrooms and bustling kitchens, how do your individual strengths converge and, perhaps, playfully clash to fuel your collective success ?
Our dynamic is a delicate ballet of contrasts and complementarity. Zorawar is the eternal visionary brimming with ideas that push boundaries while I (Dildeep) bring in the pragmatism and meticulous execution that anchor those ideas into reality. Naturally, our approaches do clash at times, but it is precisely this friction that ignites our best work. We challenge, inspire, and elevate each other always with the shared goal of excellence and authenticity.
Q. Having lived in Delhi for your entire career, what do you feel about the F&B landscape in the capital city and its evolution over the years ? Is there a particular secret sauce that goes into thriving and surviving for this long, despite the many obstacles you might have faced ?
Delhi has always been a vibrant culinary canvas deeply rooted in tradition yet ever receptive to innovation. Over the years, we’ve witnessed it transform from a city of iconic legacy establishments to a playground for fearless culinary experimentation. The secret sauce, if you will, is relentless reinvention, a deep respect for your guest’s evolving palate, and an uncompromising commitment to quality. And, perhaps most importantly, the humility to learn and adapt constantly because this city keeps you on your toes in the most exhilarating way.
Q. Where do you see the future of Dining and Going Out in India ? 5 years down the line, how do you see it changing from the current state ?
We stand on the cusp of an era where dining out will be less about the mere act of eating and more about immersive, multi-sensory experiences. Guests today crave stories on their plates, sustainability in their choices, and authenticity in every bite. Technology will continue to reshape the landscape from AI-driven personalisation to experiential virtual dining elements but at the heart of it will remain the human touch, impeccable service, and genuine hospitality. India, with its culinary diversity, is uniquely poised to lead this evolution globally.
Q. Looking back, what was the most significant challenge you faced as a couple establishing your empire under Massive Restaurants ? And, what would you both say are the unique strengths you bring to the table ?
Building Massive Restaurants has been a beautiful yet relentless journey. The biggest challenge has been maintaining a balance between the emotional intensity of marriage and the razor-sharp demands of running a business. It takes discipline to compartmentalise, to know when to be partners in business and when to simply be husband and wife. Zorawar’s unyielding creativity and appetite for risk, coupled with Dildeep’s structured, detail-oriented approach and legal astuteness, have been the twin engines of our growth. Together, we transform vision into reality.

Q. What’s the one Delhi restaurant outside your own empire that you genuinely love to visit and what are they doing right according to you ?
I don’t get that much time to eat out, but occasionally I love visiting Bukhara or Dum Pukht. My father, Jiggs Kalra, was the one who helped create these iconic concepts, so there’s a sense of nostalgia every time I walk in. What’s incredible is that decades later, they’re still packed and doing well a true testament to timeless recipes, consistency, and staying authentic to their core vision.

Q. Is being married to your business partner a blessing, a battleground, or a bit of both? And, how do you, as a couple, maintain your creative edge and passion for food amidst the relentless demands of running a culinary empire ?
It is, undoubtedly, a bit of both and therein lies its magic. What keeps us grounded is our unwavering respect for each other’s strengths and perspectives. To keep our creative flame alive, we travel extensively, dine like curious explorers, and remind ourselves that the world is our kitchen there is always more to learn, more to taste, and more to create.
Q. If you could offer one piece of advice to aspiring F&B entrepreneurs in Delhi who dream of building something as impactful as Massive Restaurants, what would it be ?
Dream audaciously but build diligently. This industry rewards passion but demands perseverance. There will be moments of glory and moments of grave doubt both must be met with humility and resolve. Never lose sight of your guest’s experience; they are your ultimate compass. And remember, the most successful restaurants are not built on what is fashionable, but on what is timelessly, authentically good.
