This is a beautiful low carb chinese recipe. You can have it with cauliflower rice if you’re into Keto or then regular rice if you are not. Enjoy-cooking is therapy!!!

INGREDIENTS
- Half kg chicken marinated in oil and garlic paste and chopped
- 2 tblsp oil
- Chopped cashewnuts-10-12
- 3 green chillies and 2 red chillies thinly chopped
- 1 tblsp Szechuanpaste (available in most supermarkets)
- 1 tblsp tomato sauce
- 1 tblsp soya sauce
- 1 tblsp water
- Chpd spring onion green
METHOD
- Put 2 tblsp oil in pan
- Fry the cashews
- Add the chillies
- Now remove the cashewnuts and keep aside.
- Add chicken and Stir fry chicken on high.
- Make sauce by mixing 1 tblsp Szechuan sauce; 1 tblsp tomato sauce n 1 tblsp soya.
- Add 1 tblsp water .
- When chicken dries add the szechuan sauce mix.
- Stir fry for half minute.
- Add the cashewnuts.
- Garnish with spring onions and serve
