This Keto Mint Chocolate Chip Ice Cream is the perfect summertime treat for mint lovers doing keto! It’s full of flavor, low in carbs, and a delicious breeze to make! It’s a low-carb mint chocolate chip ice cream, that only requires a few ingredients that you probably already have in your kitchen. INGREDIENTS

  • Unsweetened vanilla almond milk – 1/4 Cups
  • Heavy whipping cream- 3/4 Cup
  • 4% Cottage cheese- 1 Cup
  • Peppermint Essential Oil- 5 Drops (Optional)
  • Erythritol & Stevia Blend- 1/4 Cup
  • Bakers chocolate- 1 1/2 oz. Chopped (Optional)
  • Green food coloring-few drops

METHOD

  • Blend everything completely in a blender (not chocolate)
  • Churn ice cream in your ice cream maker according to directions then add mix-ins, chocolate chips, nuts, etc. Alternately you can top the ice cream with the chips.
  • Chill dish before storing ice cream. Freeze.
